OUR SIGNATURE DISH: SEITAN
Legend has it Seitan originated in 6th century China by Buddhist monks who followed a Vegetarian diet.
Back then, the preparation was to combine wheat flour with water, create a dough ball, and then rinse out the starch until only the gluten remained.
The monks cooked the dough in boiling water, resulting in “mian jin,” which translates into “wheat meat.”
We’ve updated the preparation of Seitan here in our Anchorage kitchen, but the foundation is the same.
Our recipes are grounded in wheat gluten and spices that give you unbeatable texture, flavor, and quality in every bite.
